Cover it in chocolateand a miracle or two...

Ok, so here we are waiting for an a/c guy because we are baking in our own house. I hate when there are a/c issues because you just feel like melting. However, the show must go on. I am not heating the oven when the thermostat says 86 and rising. So, when you want a chocolatey treat with no oven use, try Chocolate Oatmeal No Bake Cookies.


Chocolate Oatmeal No Bake Cookies

Ingredients:
1/2 C Butter2 C Sugar
1/2 C Milk
4 Tbsp Cocoa
1/2 C Peanut Butter
3- 3 1/2 C Quick cooking Oats
2 tsp. Vanilla


Directions:
Add the first 4 ingredients in a saucepan. Bring to a rolling boil, and boil for 1 minute. Stir in the next 3 ingredients and drop onto wax/foil paper. Let cool until set. 


By the way, as for the a/c unit, he got it working temporarily but it seems there are so many things wrong. Too numerous to list. Seems we need a new a/c unit.

Strawberry Margarita Jell-O Shots

Strawberry Margarita Jell-O Shots
Recipe via Bakers Royale

Ingredients:
1 box Strawberry Jell-O
1 cup tequila,
1 cup water
Sugar and sliced lime for garnish



Directions:
Cut the bottoms of the strawberry flat to get them to stand upright. When you do so, make sure that you do not cut off so much that there is a hole at the bottom. *REALLY  be careful about cutting off the bottom of the strawberry. Just the littlest hole (even a teeny tiny one) will make your jello leak out of the berry. Use a paring knife or small spoon to hollow out the berries. Don't get to into emptying the strawberry, just do your best.  *Look for the biggest strawberries you can, they hold the most jello.
Boil one cup of hot water in a saucepan, then add in Jell-o powder and whisk until powder is completely dissolved, about 2 minutes. Set aside. Measure out 1 cup of  tequila and set aside.
Add cold tequila to hot Jell-o mixture and stir to combine.
Pour mix into strawberries and chill overnight. Pour some sugar on a plate and rim your strawberries with it. You don't need to wet the berry it will stick on its own. Garnish with cut lime triangles to finish. Keep really cold until serving.

Menu Plan Monday ~ August 1/5 #menu #food

Good morning! The hubby and I are looking for ways to better balance our budget. One of those ways will be to plan out our week of meals. We find that when we do this, we eat out less, if at all. Although we have two different styles of cooking, we work well together.  For me,  I love quick dinners that take 30 minutes or less TOTAL. The hubby loves to cook and bbq (aren’t I lucky). And when one of us cooks, the other cleans up the mess.

So yesterday, I planned out our menu for the week and right there it feels like such a relief! I hate spending money out. Typically I am not all that happy with it either. Not that I am hard to please. It’s just that, locally at least, customer service isn’t what it once was and quality and quantity have gone down as well. Not that I need a lot of food but I want what I pay for, ya know?  


My Weekly Menu Plan:

Monday:    Grilled Chicken (extra chicken made for next days lunch) with Sugar Snap Peas, Rice
Tuesday:  Beef and Noodles
Wednesday:  Grilled Pork Chops with Grilled Veggies
Thursday:  Betty Crocker Complete Meal Taco Bake (we got this on a deal and wanted to try!)
Friday:  Not sure yet. It will be a crock pot meal.
